Polyphenols click here to view  are a group of chemical compounds that are widely distributed in nature and the most important groups of polyphenols in nature are:
1. Flavanoids
2. Esters, glycosides and amides of the hydroxycinnamic acids: the phenolic acids
3. Gallic acid and its esters
4. Phlorotannins
Of these four groups the flavanoids  click here to view  are considered the most important from a nutritional perspective. All flavanoids have the same basic chemical structure, a three-ringed molecule with hydroxyl (OH) groups attached. The structure shows the tricyclic C6.C3.C6 skeleton. A multitude of other substitutions can occur, giving rise to many types of flavanoids.
The food flavanoids are further classified as follows: anthocyanidin, aurones, bioflavanoids, chalcones, dihydrochalcones, dihydroflavanol, flavanol, flavanones, flavones, flavanols, isoflavanoids and proanthocyanidins.  click here to view
