| Quercetin has been found to inhibit the oxidation
of LDL ("bad") cholesterol, in other words, keeping

already-oxidised vitamin E. Simply put, free radicals are largely
the cause of LDL oxidation. By neutralising these free radical
molecules, flavanoids are able to prevent the oxidation of the
polyunsaturated fatty acid groups in LDL. |
