The formation of free radical molecules in the human body is a natural result of our metabolism. In moderate quantities these electrically-charged molecules play an important role in destroying invasive viral or bacterial cells. When left unchecked, however, they attack healthy cells and can impair the immune system, leading to chronic conditions and diseases like arthritis, cancer and heart disease. Free radical damage is also believed to be the basis of the ageing process.

The formation of free radicals is normally controlled by the natural antioxidants produced by the body and found in our diet, eg, vitamin E and C, bioflavanoids and carotene.

Inhibition of LDL
Quercetin has been found to inhibit the oxidation of LDL ("bad") cholesterol, in other words, keeping level of unhealthy cholesterol from increasing. It does this by preventing the oxidation of vitamin E in LDL and by regenerating already-oxidised vitamin E. Simply put, free radicals are largely the cause of LDL oxidation. By neutralising these free radical molecules, flavanoids are able to prevent the oxidation of the polyunsaturated fatty acid groups in LDL.
Heart disease
As flavanoid intake increases, so the risk of heart disease decreases. Quercetin's antioxidant and anti-inflammatory properties make it an important ally in the fight against cardiovascular disease. As it does with cancer cells, quercetin appears to function in a similar way to stop the overgrowth of cells that harm the heart.
Cataracts
Research indicates that quercetin blocks an enzyme that leads to accumulation of sorbitol, a type of sugar that contributes to cataract formation.
Absorption of trace elements and minerals
